Japanese green tea is delicate and can easily become bitter if brewed at too high of a temperature. The ideal temperature for brewing Japanese green tea is between 160°F to 180°F ( 70°C to 80°C ).
If the water temperature is too hot, it can cause the tea leaves to release tannins and other compounds that can give the tea a bitter taste.
Additionally, when brewing Japanese green tea, it's recommended to steep the tea for no more than 1-2 minutes, as over-steeping can also cause the tea to become bitter.
